Does anybody know what the process of fitting them would entail, and would it be achievable or very difficult/ not worth my while?

lots of wiring diagrams on the internet
not too difficult of a job with a few basic tools and ability to route and connect wires.
Totally up to you if you think its worth while. Is almost standard mod on GTIs but I'd first spend time and effort making sure the car as fully serviced, rust proofed to death and has 4 matching decent tyres etc before fitting gauges
