On the weather!
After a while you'll be amaized at how good you get at judging whether some clouds are going to do their thing.
Also depends on how long you are away from the car. If you have valuables in it, whether you have a full closure alarm and what sort of area you've park it in.
Leaving a roof down for long periods isn't recommended. But a whole day would be fine.

1. Weather
2. Area where you park
3. How far away you are from the car
I had some advice when I put my new (plastic) hood on, "Dont put the hood down in cold weather. It cracks at the folds". So I never have done and to date the folds have stayed crack free.
Hope that helps a little as the cold frosty days are quite tempting to get the hood down and heater on!!

Also forgot that its not good to fold the roof down if its wet either!

I take off the faceplate to the stereo, lock the glovebox and the boot anytime I leave the car with the top down.
That is good advice about not putting the top down in cold weather or when the top has not been wiped down if wet. To keep the top from staining or scuffing, make sure it is free of lots of grit before folding it on itself - think sandpaper between the folds.
All kinds of stuff accumulates in a car with no top : bird bombs, leaves, bugs, mean people that toss trash in it (common in pickup trucks in Texas), and dirt/soot/sand. So be prepared for this visceral experience whether parked or actually behind the wheel.
But as with any other car, you really ought to just roll up the windows and lock it if you aren't going to be anywhere near it .
