uprated oil cooler fitting

Just bought a new 10 row cooler and fitting kit from rallydesign which included a sandwich plate with built in thermostat that restricts oil flow untill it reaches 80 degrees.  The guy i spoke to said that this makes the oil reach the optimum temp faster and then only starts cooling it when it gets and hotter.

Here's a pic of the kit.

The sandwich plate as you may or may not know goes between the engine oil plate and filter (Red arrow)

My question is this.  Is it ok just to block up the original inlet and outlet hose connectors (shown in green) with blanking plugs/bolts and if I do, will it cause any problems with the readings I get from the sensors mounted in the oil housing-plate-thing?

You will have no problems . Readings will not be affected .

So isnt the original cooler part or the oil flow path, and will blocking these outlets not stop the flow of oil.

Use an oil filter-block housing (part number 2) from another VW without the air-oil cooler. Or, have oil pipes made up which fit the non-standard connections on the existing one to your new oil cooler (but this will be a PITA!)
