how to change the exteriors of a 90s mk1 to an early 80s one

i am located in italy and i am no longer sure i can find a good deal for a black golf cabriolet (1979 - 1986) so i was thinking of buying a 90s one,my problem is that i dont like the newer bumper ,the upper wheel plastic archs (or whatever they are called??) and the plastic frame in the bottom of the car ,also i want the old front grill with the metal frame..
the question is what do i need to do and buy to get rid of those parts and replace them with the older ones.and most of all is it an easy task or not ?

if the kit has been properly fitted and metal work is all good underneath just a case of remove everything, and fit all the older mk1 parts. the front grille is a little tricky as you need to find the clip kit to allow for the old style grille fixings to go into the newer slam panel.
VW used to sell the parts needed as they replaced the original slam panel with the newer cabrio version, so you would need them if welding the later panel to an older shell.
155853119 - clip - nla but classic parts have them x2

and think you need this one as well, VW still stock it:
1h0853120 - expanding nut, outer, upper - 90p+VAT x2
