It depends if you like corners If you have a small block carb tank it won't have a swirl pot in the tank so on heavy cornering you may get fuel surge.
The general consensus is to fit a late cabriolet lift pump in the top of the fuel tank which replaces the stock fuel sender and this then fills a cabriolet plastic external swirl pot. http://www.classic-vw.co.uk/mk1-golf-cabriolet-gti-fuel-swirl-pot-533201151a-4981-p.asp
The swirl pot is then fed to a Gti style inline fuel pump which you have mentioned. http://www.classic-vw.co.uk/mk1-golf-gti-fuel-pump-x285-barx29-4711-p.asp
This is the set-up I ran with my G60 and about to use on my R32.
Any questions give me a shout. I have managed to maintain the existing locations of all components under the car except for the plastic swirl pot which is located in an accumulator cradle in stock gti location.

The tricky bit to get is the lift pump. There are different versions of this. I linked to a pic of the one I have. The external swirl pots are quite easy to come by now.
