Your easiest may not be the cheapest option, which would be to buy another car eg a rotten or rough mk2, which will give you all the little bits and bobs and a clue as to how everything goes together. Is the gearbox present?
Used Engines are your cheapest option, fairly easy to find second hand, I bought one last year, from a 1.6 mk2, pretty much the same as Mk1.
It just depends on how much is left behind, as buying all the smaller bits can soon add up.

So sad as it only has 29k on the clock
The 1.6 non turbo Diesel engine it came with looks good clean and complete just not what I want👎🏻
I have a diesel Q5 and hate the stuff
Also it came with a truckman top I'm willing to give away free of charge if anyone would like it….

1. Figure out what you do have, and what you're missing
2. Buy as complete-as-possible engine and other bits. Some of the pics so far, the parts look beyond end-of-life, so try get working bits instead of more unusable junk
3. Figure out the fuelling to convert from the diesel fuel tank to a petrol engine. I think it would be okay, just plugging the hole at the bottom and using the fuel level sensor/tube that goes in the top of a carb engined car, but I don't know the caddy specifics
4. Start putting it all together and figure out the missing stuff along the way, buy more stuff, fit it, buy more stuff, fit it etc.
