Settling In
I know if a bit of a vague, but I have a couple of questions in regards to coilovers in a Mk1.
What do you think it the idea ride height? Front/Rear
What spring ratings do you prefer? Front/Rear
If you have adjustable damping how to you run it? Front/Rear

Depending on driving skills and trackday experience I would say that fast road spring rates would be a good starting point, in general a bit of understeer is easier to learn with than harder springs and potential catastrophic oversteer. Good quality coilovers will have enough damping adjustment to keep most people happy for quite while. You can then try changing to harder springs at a later date.
IMO having fun and enjoying your car on track and being progressive with learning, is must better than having a too aggressive car.
coilovers are just one part of the package, good brakes, updated anti-roll bars, bushes, tyres and appropriate wheel alignment all make a difference too.
