Theres not alot really out there for the golf bodykit wise so your best to stay classy (and therefore less targetable by jon q plod).
Im going for a euro style golF low, wide wheels, change you indicators, tail lights head lights(clear lights usually a safe option)
Remove the trim lines (along the side's) door handels, boot lock.
Heres some links happy hunting!

Im sure you could convert you brakes, anything can be done these days
i am not that knowadgeable on brakes :? , however i has seen kits, as for lowering theres certan factors you need to take into acount.
First of all, the lower your car is the more straine is put on ball joints, drive shafts etc. Secondly you need to take in acount driveability lower it too much and it may upset the handeling and most importantly how many sleepin police men are there in your area?
Alot of classic car enthusiast go for the 1 inch drop (40 mm) which gives a much nicer, more agressive stance on the road whilst still being able to pop down the supermarkets each day

Yeh cheers for the advice ebo.
There are quite alot of sleeping policeman in my area so i will defentetly go for 40mm drop, someone on demon vw is selling me a set of apex 60mm springs for 50quid which came of his mk1 he said 'you just use the standard shocks, and remove the springs using a set of springcompressors, you can get from say halfords, and then rebuilding the shock in the correct order, keep everything in the right order', better than paying out 100quid+ on the kits. Does the look of the mk1 look nicer when they have been dropped by 40mm?

Aye its well worth it at 40mm, it'll look well better than before! (standard shockies a fine at 40 but lower and you'll see why you need uprated shockies!) What sort of wheels have you got on it or are you going to put on it? Nice new polyuraphane bushes will help you get through the corners better…. Lol
Spring compressors will do the trick but i'd try to get them somwhere else than halfords (they're rip-off merchants in my area!)
Heres a example from the owners photos, mikey i think, nice

you wont need spring compressors to take the springs from your original shockers, just a ring spanner and allen key/ small spanner to hold arm while you undo retaining bolt, if you are gonna put -60mil springs on standard shocks you will not need a spring compressor to put these on either as they will be wobbling around until you add weight of car on them and then your handling/ride quality aint gonna be great neither and your standard dampers will wear out a lot quicker due to excess strain on them. you would be better getting a 'kit' as they dont cost much, 60mm is a fair old drop on a mk1 especially if you are considering running anything above 14" wheels. your mk1 has servo brakes its just they are dated, whats models your car?
p.s if u go to all the hassle of paying 50 quid for lowering springs and fit them (which can be a royal pain as some of the nuts dont wanna budge) buy yourself a boge or bilstein kit with gas shocks and shiney bits

german swedish do a full kit for ?150 + vat mate, would be better handling but not drop as much as 60mm more like 30/40mm, or try your luck on ebay. i had 50mm springs on standard shocks and it did look nice but ride was horrid and if i was to start again i would get a kit i reckon. you could replace your servo for a mk2 item your disks and pads for better aftermarket items this would help you brake better and shouldnt be to costly, good luck,
