1.8t engine management

I have a 225hp bam engine, loom and ecu, i know theres plenty of aftermarket engine management options but for a number of reasons i would like to use the oem management if at all possible, before i commit either way i have a few questions, if i get an immoboliser defeat will i need to use the audi clocks or can they be completely binned, is it possible to get the dbw throttle deleted and run a cable throttle? (not a big deal if not) does the ecu need a speed reading? (02j is electronic speedo afterall and i will be using cable), probably easier if i tell you what im aiming for and those with experience can point out the problems

Standard bam engine
Single mass flywheel
Secondary air system deleted
No pas or ac
No charcoal cannister
Standard mk1 clocks and accociated senders for oil and coolant etc, dont really want to use the audi clocks at all (even hidden under dash)
Cable throttle would be nice but not essential
Cable speedo
Twin lambda as wideband would be nice as the ecu is a wideband ecu
Would like to wire in the audi diagnostic port

Can the deleting of things from the ecu be done myself with vagcom or similar
