I'm struggling on what colour think going be best paint my mk1 caddy pick up. It's white from factory

If it's standard then I'd stick to an original VW colour. Ideally something to compliment your interior so you don't need to replace it all.
If it's modded, go mad and do something you really like. Or something odd.
Have you seen the pick ups painted in Raptor bed liner?

I vote keep it white.
The black parts of the car - grill, mirrors, chin, etc - really compliment it, IMHO.

White is great if EVERYTHING else is perfect to contrast with the white or it can look tatty. White hides nothing. If you have faded grills and tatty mirrors then you see these before the perfect paint. What about old colours like olive green with maybe an old English white roof like the old mini?? Baby blue with black trims and hard coated black bed. Retro colours look great on caddy and as they age they still look great. To be honest only you can decide.
