Hi
Car starts pretty well when cold. But I have noticed once warm if I stop for fuel for example it really struggles to start. I have to give it alot of throttle and few turns on the key

Hi, is it a carb engine? If so, it may be normal to use throttle when restarting from hot. For example with the 1.8 EX engine (with Pierburg carb), the manual advises holding at full throttle until the engine starts when the engine is already hot.

And yes carb engine 1.8 not sure on engine code guessing it's the one you mentioned

Does it have the original Pierburg (automatic choke) or replacement Weber (manual choke) carb? If Weber, I assume you leave the choke control fully in when starting from hot? I'm not familiar with the Weber, but I'm guessing like the Pierburg, that would also need some throttle to start when hot.
Does the car idle and drive as normal as soon as it has started?

Has the original carb on it still and yea drives normal no issues at all. I've been caught out before almost making the battery flat trying to start it even after driving it for 30mins or so

A bit of a puzzle really - not easy to advise without having experienced it. The troubleshooting info in the Pierburg 2E2 service manual relates to cold starting/warmup/rough running/stalling/lack of power, etc, but nothing on hot starting.
Don't be afraid to use a decent amount of throttle while running the starter until it fires. But don't pump the pedal repeatedly as that will flood the engine with to much fuel - every push of the accelerator squirts another jet of fuel into the carb.
