Guess a bar has come off the back on handle maybe?
Is it a door card off job or the block on the door the golf rectangle section

It could be that the white nylon lever isn't on the finger coming out of the latch. Number 9 in the parts breakdown.

Door does lock or unlock
I put the key in door lock and it turns I put lock mechanism in and key can't turn

I can push the door card pin up and down now but I can't turn the key to clock or unlock car. It just keeps turning to a set point
I can't get the fork shape to line up lock/unlock

You didn't mention if you had replaced the door handles lately.
Why be cause the Cabriolet and the Caddy had different striker pawls the "v" forks. than the 2 or 4 door golfs. One is longer (for the caddy/cabriolet) one is a tad shorter, (golfs)

Not all replacements are or the correct year, and you have to use the Existing pawls from the original door handles.
When i converted one of my Cabbies over to the Mk3 handles (recenssed) i Had to modify the striker plate and the position of the handle in the doors.
You will probably have to remove your door card to verify the action on the pawl to the lock cylinder when you twist it. Or it could be that your handle is starting to break at the rear large screw part. You may also try to loosen the handle screws, and push the handle to the rear of the car, then tighten down the outer screw prior to tightening the rear behind the door screw,

Door does lock or unlock
That may be where I'm.going wrong then
I fitted a new handle it locks ok but doesn't open the key rams.
