did you test the 'stat before you fitted it?
maybe try backflushing the whole system just to be sure then run it upto temp and bleed it again..

As for making sure theres no airlocks - some people like to drill a small (1mm ish) hole in the 'stat to help bleeding.
I like to set the blowers in the car to full heat, fill the rad to the fill line and then pull the coolant hose of the side of the head to fill up the block which is on on the other side of the 'stat.
When its full run it up to temperature, take the cap of the rad/expansion tank and start grabbing and squeezing every hose you can get your hands on. pop the cap back on, take it for a run then top up if you need to.

A lot of the time, motor-factors will have two lines of products, for example GSF do the 'standard' bits and the 'premium' bits, and more often than not the 'standard' are crappy cheap chinese copies of the 'premium' parts which are OEM…
When you take your old 'stat back for replacement, take a mug with you and ask if they have a ketttle in the back (I'm serious!) that way you can check it works before you leave the shop
