Oil Pressure Warning - MK1 1800 GTI
I believe this could be one of two things :
1) Oil pressure sensor
2) Electrics on dash circuit board
Anything else?

I have a VDO gauge showing good pressure and mine flashes occasionally, usually when its been parked in bright sunshine all day and the dash/instruments are baking hot. Very occasionally the buzzer will join the party as well. 9 times out of 10 a rap on the instrument cluster with knuckles cures it. Been thinking about resoldering all the joints?
Search for the many threads about this. In theory you can?t trick it by disconnecting senders as there are two, one open and then closed and the other the closed then open. The logic in the cluster also takes into account rpm (2000). This can be fooled by removing the appropriate wire form the coil but then your rev counter will also stop working.
Check all your earths if turning your lights on effects it.
