Some odd requests in here - a lot of the parts mentioned are available after market and at OE spec, or even good secondhand. Genuine seals are available, as are door cards/interior parts from Status VW, or Newton Commercial. Status VW also do parcel shelfs!
There's a good range of parts available after market, mechanical stuff can be bought from GSF, and ECP and CQ has remanufactured stuff too.
But no one will make body panels to VW spec. So it's a vote for body panels from me.
Edit - oh and GTI drivers seat bolsters

G55 units for the MFA
Mine specifically, Motometer clocks 1983 cabriolet
If anything comes up as a constantly re-curring theme it is dashboard failures - most usually "the MFA doesn't work" or "my MFA shows 99.9mpg"
I am pretty sure the 99.9 mpg problem can be traced to the G55 unit. When manufactured these were calibrated to 1 BAR constant pressure and maintained at this by being filled with alcohol. Over the years the alcohol evaporates causing the default reading at the dash - at least this is my diagnosis thus far - might be incorrect
Having said this, the 1980's VW diagnostic test for the 99.9mpg problem always ends with "replace G55 unit" if the diagnostics don't resolve the problem so I am pretty sure I am in the correct area.
Thanks,
MP

agree with Gav, many bits mentioned are still available..
Main thing is body panels
Although parcel shelfs + supports, chrome bumpers and end caps,
83 GTI distributor, Chrome and red trim grilles
