unfortunatly not fitted to myn but would be interested in adding.

Nice easy one is to mount the headrests to the back of the seat. Usually by mounting 4 tubes using pipe clips found at DIY stores in the plumping aisle. Whilst this works it can look a bit odd if you don't get the right headrests as it puts the headrest further back.
The other option and the one I adopted last time I did this (to a friends fiesta because he is a chav) was to remove the seat cover and mount the same tubes on the inside only stepped off an inch from the backing and cut the foam to suit. Then to the scrap yard to find set of head rests and the plastic bits that go though the fabric and have the lock on them. Then rewrap the seats with all this fitted.
It looked professional at least. Lol
Personally with the golf I'd go for the first way. Seats are getting harder to find these days and cutting holes in fabric is not something I'd want to do.

This wouldn't work mate. The hood clearance is so minimal that any overhang behind the seats would deffo foul its movement on closing. I only know becasuse I've looked in to it before.

option 2 it is then.
still wouldn't be willing to do it to my golf though. i could see it being easy to get wrong if your not sure about it.
unless your getting your seats recovered. at which point i'd do it and let the upholsterer work out the fabric side of things.

Did the tintop GTi ever come with rear headrests? A set of campaign seats went on ebay the other day with a parcel shelf and rear headrests and I'd never seen them before, and can't find any info about it?
