I have been a VW car enthusiast for some years having owned a couple Mk2 golfs both 8 + 16v and then a Mk3 vr6. i then went back to a Mk2 16v and restored it and recently sold my Corrado Vr6 project for something a little more vintage.
So after some thought I decided I wanted a car that had already had some work carried out on it as I am clearly I bit of a petrol head and found a 1980 Series 1 Mk1. Some of you may have seen it before. It's been treated to a 1800cc supercharged 200bhp out of a G60 Corrado. Resprayed and a decluttered engine bay. It was featured in Golf+ in May of this year. It's had a few alterations since then and I already ave a list of thing to do to get it up to scratch.

Lovely looking MK1 you have got yourself there. Better get those brakes sorted quick with 200bhp under your right foot

Right wheel off today to start some jobs. As its running standard brakes with no servo I have decided to start there. This is what I have to start with standard 239 brakes with 200 bhp
It was all covered with cv grease from a slight split in the boot.
Cleaning it all up and will paint the hub and renew the boot in next few days. I have got my hands on a 270 tsr set up and will be painting it and fitting it over the next few days.

Got the TSR 270 brakes fitted now. Cleaned up and painted callipers. This will do to start with then I will get the servo on and go from there. Knowing me I will upgrade them next year again.
After this was done I dragged it out of the garage for the first time since I bought it to turn it round for the other side as I need to replace inner and outer boots as well as wheel bearing too. Makes a nice sound now as the original supercharger pipe is back on to stop unused air being dumped in to engine bay.

Most people when they do the boost modification (removal of excess boost recirculation) put a blanking plate on the right hand side of the charger. In your case, the previous owner obviously put a twin inlet kit on .
There are pro's and cons of doing this mod as follows.
Doing a boost return delete stops pre compressed air (very hot) from entering the charger again on the RHS. Thsi obviously reduces intake temps slightly which is a good thing.
The cons are that a form of supercharger lubrication has now been gotten rid of as the excess boost carries oil vapour with it. To get over this problem, spray the charger inlet with lube for 3 seconds every couple of thousand miles.
The other downside is that the excess boost obviously needs to go somewhere and most people will attach a pipe to the underside of the TB to guide the boost/oil mist towards the underside of the car. This can make for a messy situation. The solution is to fit a capture system and clean it out periodically.
I have made a custom twin intake system for my G60 that also allows for oil vapour/excess boost to be recirculated. I'll get pics up when I can as its currently being worked on.
As for your brakes, the lack of servo will not have a detremental effect on braking performance, it will just give your leg muscles a work out. It is an assistance item. Now that you have specced up your disk size, the performance change should hopefully be noticable. I would opt for braided brake lines while your on the job.
If your going togo down the route of making your motor a 16v, a good start is to purchase a scirrocco 16v inlet manifold and the elbow on teh right hand side of it. There are 3 for sale on eBay.de at the mo. Obviously the one to go for is the 50mm version.
Hope this info is helpfull to you in one way or another, I know you didnt ask for it but I thought it might shed some light on certain aspects of your car/engine.
