Cheers for this very helpful, Just ben to the le mans 24hrs all the way from newcastle in the mk1 and had a fair few problems there and back.
(1) Over heating but is was baking hot
(2) Main beam headlight issues
(3) MAF sensor playing up
(4) Thought we had power, earth issue still may have but we resolved not starting to be the starter motor
Made it all the way there and back but had to do a few DIY fixes and replace starter motor

looking at the electrics they don't look great, I didn't do the conversion from original to mk3 2.0 8v tall block.
Maybe I should replace the whole loom or try and tidy what I have, electrics ain't my strong suit so any ideas are welcome (maybe another engine conversion should be looked into)

1. what temp were you seeing coolant and oil temp, and what width/thickness rad are you using
2. in what way
3. diagnostics should help here
4. to rule out earhing issue run a jump lead from the battery straight to one of the starter bolts. the mk1 gearbox earth cable is in a poor location on top of the upper bracket, corrosion builds up. later mk2 and mk3 golf moved it to a stud on the end of the rear upper engine -> gearbox bolt which is much better. I'd look at mk3 golf battery cables, much better
5. this is your call, depending how bad it is you may find its more economical to start again
