I can't tell you the exact dimensions of depth, but from memory it should be front panel and lower front wing corners, all below the front bumper, both sills and rear valance below the bumper.
Perhaps someone with a non-restored car can put some pics up ?

The side sills go pretty much up to the black strip, the front valance on mine is pretty worn after 100k, but appears to go right up to the bumper. And around the vents behind the bumper.At the rear the corners go up to the bumper and then just around to where the tailpipe cut out is or the towing eye, then the rest of the rear panel is smooth.
The texture of most of the stone chip is quite smooth though on the sills and front, just applied I think a bit too thickly on the rear of mine so don't get a too textured finish like some modern cars.
