Leather interior - what fits??

Hi there,
Just wondering what interior fits nice and easily into a Mk1 GTI cabby?

I bought mine with a nice set of black Recaros in the front (haven't a clue what they are off originally), but the rear seat does not fit well and sadly does not match the front. As im looking to give it a facelift for a summer a new interior may be required. What are your suggestions???
