What you need to do is use a T-piece that is suitable for one of the two oil ways (making sure it clears the air filter!), have a look at demon-tweeks, rally design and similar outfits.

VW part numbers for the senders are:
049 919 501 - 0-125 degrees C
049 919 563A - 0-180 degrees C
I think I used the latter and all works fine, about ?7 or so.
If you have a VDO gauge then on the back are 3 pins, one pin, marked 'G' goes to the gauge, the other two are '+' and '-', battery positive and negative/earth.
But of course you dont want them on 'full time' i.e. when you turn off and take the key out, so I think you can splice in a spare ignition feed from the fusebox (pull it down towards you, bottom right corner nearest you, you should see 8 or so male spade terminals, these are spare ignition feeds. The opposite end in the middle are spare power take offs) and put this onto the gauge terminal with a power feed. Or I think you could just use a spare ignition feed as your positive connection for the gauge.
Again, if it's a VDO a bulb slots in at the top with a special holder (if you have one) and the power feed for this you can get from the cigarette lighter illumination so that it comes on with your lights.
If you have an oil pressure gauge as well (0-5 Bar and 0-10 Bar are avaliable, make sure you get the right sender) and it's a VDO, you can use the standard high pressure sender (White) already in the back of the head (I did anyway), it is linked to one of the little LEDs in the dash but now you will be able to see the info on the dial. 2Bar at 2000rpm with oil temp at 90 degrees C I think it should read.
Volt gauge is easy, + to + and - to - across the battery.
I have a wiring diagram if you need to make a loom for 3 gauges (Oil Pressure, Volts, Oil Temperature).
