wide wheels?

hey all, i have a vr6 mk1 with wheelspin issues… im getting some new wheels and need some advice? the hubs have moved towards the arches because of the conversion so i have some scrubbing, mainly on the rear, may be able to remedy this with coilovers but ideally i'd like to sort some of this with an et choice. the standard 5 stud golf wheels on there have an et of 35 right? do i need to get say 25 to move them in?

also the conversion has the car wheel spinning very easy, i'd like to fit wider wheels, taking the wider track into account how wide, how big i.e 15's, and what offset would be best?
