5x112 on the rear of a mk1 is possible using late model Polo parts.. but you'll be converting to discs and it'll get expensive..
Fronts, although not impossible, its very difficult to convert to 5 x 112. You can fit 5 x 100 mk1 hubs and then use 5 x 100 to 5 x 112 adaptors..

If you can source 4 x 100 to 5 x 112 adaptors and the alloys have enough ET to allow you to fit them then thats your best option to be honest..

Click on the "Search" button at the top of the screen and enter 5 stud into the box. Then scroll down a few less relevant threads and find the one with the title how hard is it to fit five stud wheels?, then read it and it will reveal. If needs be, go back to the search results and scroll down for other, similar threads. If needs be, try a few related search terms, ignoring common words and using words which directly relate to the technical issue at hand. eg you might try your make/model or donor car of wheels, etc.
