Best bet for the fabric is either put a thread in the wanted section for the same seats but better condition fabric and swap them. If you want new fabric try www.newtoncomm.co.uk
For the side trim (black and chrome?) stick up a thread in the wanted section again. These are normally in good condition or alternatively keep an eye on ebay but full sets can go for ?40+ quid. Try this
If you manage to get hold of the trim it will be worth replacing all the clips around the car. Don't get them from ebay though, your local dealer can get hold of them for a lot less.
There's nothing you can do to prevent the trim from being nicked - apart from glueing them on. I've got a spare trim of one of the strips you're after but I'm keeping it incase the same thing happens to me. Sorry

Might be worth your while to ring up a few breakers yards- they can be useful for the later Mk1s ……I know of a reasonable one if you live in/near Suffolk.

Your not alone some1 nicked my front quarter strip the other day too! Little Pikeys! :evil: probably just for the crack no doubt. so if i find some ill PM you too.

Went to my local(ish) breakers today and found 3 mk1s. I've managed to get the chrome and black trim off one of the cabbies. BUT, pesky passenger door trim missing again. So let me know if you need them still. They're in good nick.
