Biggest I would go on a Mk1 is 15's. That's what size the ATS Cups on the 16-S were and I think they also did P-slots that size but they might have been after market.
I wouldn't go much bigger or you'll have problems.

What's so wrong with the stock ones?
In any case, wheels tend to be a personal choice. There's a few popular ones but then if you fit these, you'll be accused of 'following the scene'.

15" ATS Cups float my boat but generally come with an offset that could interfere with the arches.

Nothing "sheep" about a set of cult high quality rims, people who cant afford splits, usually shout the most its not following the crowd, the reason they are popular is they look the Bulldogs jewelery on any Dub!
besides any of that 15 inch BBS RS & RM`s are original "optional" VW rims from the G60`Golfs and Corrado`s

For some reason i prefer non split BBS, RAs i think? A little bit less 'look at me'

I have a set of 195/45 R15 Toyo's ready for a set of wheels but im thinking of going for a set of 14", as 15" are just a little to big for me i think . But then i have seen 16" porsche wheels look great on a Mk1
