check out QPENG they have a conversion guide.
there are a fair few 20vT conversion threads kicking around - just check the search

parts needed though to get you going:

Engine (AGU is a good starting point)
Gearbox (mk3 16v cable type will do)
Cable shifter and appropriate tower
Clutch wise you can either use hydro and fit to the bulkhead, pedal box etc or use a cable to hydro converter mostly found on SEAT's
Intercoolor (alot floating around on eBay) and pipework
Air filter
Wiring loom (Rubjonny or AndOUT can remove the immobiliser from the ECU and splice the loom to fit the current fusebox. OR you can spend a grand at QPENG for a plug and play loom)
Downpipe
Engine Mounts (Front one is good but the gearbox and engine mount are different to standard big block)

That's all i can think of right now but something to get you going

Some great advice there Nicko :D There's loads of info up for grabs.. Heres a good startimg point http://www.vwgolfmk1.org.uk/modules.php?name=Forums&file=viewtopic&t=94357&highlight=

Note : Don't think your getting a deal with an AEB etc engine, i.e. A4, Passat. You have to spend the difference in parts to make it fit. Nevermind the hassle, lol.
