Hi guys. Just after tips for when storing my golf through winter.
I’ve got a very drafty garage which it’s keptin, which means it gets quite dusty. I’ve been told using a car cover can create moisture, which will encourage it to rust (further).
Also, do I take the battery out and trifle charge it? Or starting it up every now and again? All tips welcome!

Draft is good, keeps the damp away. I wouldn't worry about dust, but you could get an indoor cover - they are breatheable, and with the draft, you shouldn't get damp.
If you have a trickle charger, use that. No real need to remove the battery to do that.
Over inflating the tyres is one I have heard as it can reduce flat spot tyre deformation, but I reckon it would need to be sat quite a while for that to be an issue. Saying that, I do that with our MGB as it never goes out in winter.
I'd also leave your windows open a bit to stop any damp build up in side the car.
Oh, and fill the tank, this prevents excessive moisture build up in the tank that can cause rust.

agree ventilation is good to keep the condensation away, if poss on days thats theres not too much salt on the roads give it a run or atleast up and down the drive a few times

Storage

I always lifted my camper up and popped on axle stands to take the weight off the tyres. A breathable cover is fine. Just make sure the car is clean before you put it on. Dust and dirt between cover and car can cause scratching.

I do disconnect the battery when leaving my car for a couple of months by removing the earth lead.

All the above, it takes about 6 months to get flat spots, makes driving on a good road feel like a washboard. Only Crack the windows as you don't want rodents to get in the interior, as well as putting down rat traps or mouse traps, I know folks that use the rat baits on a can lid on the floor boards and under the hood in to keep rodents from nibbling the wires

Stabil in the fuel tank, with a couple of cans of De-icer works well, wouldn't even hurt to have a Octane booster as well  When storing I also add about 6 to 7 ounces of
SeaFoam engine treatment in it as well.
