No doubt this has been seen a million times so please bear with me. I've completely knackered the brake disc retaining screw and so am unable to get the disc off. Can I just take the whole hub off with the disk still attached or do I have to get the screw out first? I've got a new hub and disk to go on.

No need it is a rather large bother….
Go Buy a set of Left-Handed Drill Bits.
WIth a reversible drill, place a drill bit that is a tad smaller than the diameter of the bolt (not the head usually 3/16 of an inch works .)
https://www.harborfreight.com/left-hand-drill-bit-set-13-pc-61686.html . usually about 15-20 bucks for a set.
https://www.amazon.co.uk/slp/left-handed-drill-bits/gcx552yucghn7oe
Place the drill in reverse, and center drill the head. It will start drilling, then usually bind about 1/2 way in and back out so fast you won't believe it. All of about 2-3 minutes, and you don't have to remove anything.
The Screws are M6X16 . p/n N 10648301

It works…. The second vid is a hoot. The guy can't believe it, and it is a bolt in the wheel well.

Impact driver or drill it out.
You don't really need a screw in there as the wheel and bolts hold it in place.

Thanks gents. Have tried the reversible screw method to no avail and an angle grinder to make a notch for a flat screwdriver has proper, proper knackered it. Going to try drilling it out completely.

If the hub is getting replaced you have no worries about saving the thread on the hub.....big drill and some lube will do it!

Start with a small drill, get it as close to centred as you can and gradually increase the drill size. If you aren't dead centre (you won't be) once you can see the thread in the hub, go up one more size. You'll then find that you can peel the remaining screw out the thread. If you are really bothered you can run a tap through it once done to clean the threads up. The screws are only there to hold the disc in place whilst you put the wheels on, so there is no risk if the thread isn't fully biting.
Cack job, done it too many times, but get there in the end. I should invest in some left handed drill bits….

Done this morning. A small drill bit getting larger with a bit of oil did the trick after a few snapped bits and some swearing.
Thanks to all for the advice.

I've had this a few times. Glad you've sorted it for now.
I found using an old flat screwdriver and a hammer - basically use the screwdriver as a chisel and create a grove in the screw head - tapping gently with a hammer should get it moving loose and it will undo that way.
Trouble sometimes with drilling, you loose a few drill bits in the process and can sometimes leave the thread in.
