What To Cook For Dinner!?

Hi all

After some help/advice, and as you can see from the title it is nothing to do with cars at all! I have said to a friend (female) that i will cook for her tomorrow night, only problem is i dont know what to cook. I want to do something interesting, but with that in mind i am no Gordon Ramsey so it also has to be easy enough to achieve (although i can cook the normal stuff).

Obviously i want to look like i know my way around the kitchen!

Can anyone offer a suggestion?

Ingredients:

2 x Chicken Breasts
1 x Jar of tomato and Basil sauce
1 x bag of grated cheese (i like either Monterey Jack or Mozerella)
1kilo of baby new potatoes

This is quite a quick and simple meal but tasty   8)

Put the new potatoes in saucepan boil and then simmer

Have oven at 165c and get 2 small oven proof dishes, put some tomato and basil sauce in dishes then put a chicken breast in both, then smother in more sauce then cover in grated cheese.
Put in oven for about 35 minutes.
Drain potatoes and put equal amount on plate, then put chicken with all the juices from dishes on the plate and serve.  Dont forget to put butter over your new potatoes and salt to taste  8)

Spaghetti and meatballs, lady and the tramp styleee!

Chicken with Orange and mint

Prep time 5 mins, cooking time 20mins approx.

1 large tin potatoes.

1 bunch fresh Asparagus.

2 chicken breasts.

Handful of freshly chopped mint.

2 large oranges juiced.

3 knobs of unsalted butter.

Salt & Pepper.

Put water or steamer on for the asparagus.

Season the chicken breasts with the salt and pepper.

Trim the blunt ends of the asparagus.

Drain the potatoes and slice into discs.

Place a knob of butter in a heavy based pan or frying pan with a lid.

Heat the butter up and brown the chicken breasts on both sides. About 4 mins a side. Once browned pour in the freshly squeezed orange juice.
Cover with lid or a plate and simmer for a further 8 mins.

Meanwhile the asparagus, should be boiled or steamed for 5-8mins, until tender.

Remove the chicken breasts and place on a plate and keep warm. Add a second knob of butter and increase the heat and reduce the sauce, stirring in the chopped mint.

When the sauce has reduced, pour the sauce over the chicken and place asparagus on the plate.

Wipe the pan out and add a further knob of butter over a med-high heat, add the potatoes and cook until browned.

Place potatoes on the plates and serve.

Remember to have a nice chilled wine also (your taste).
