Temperature Gauge
im guessing theres;
A sender unit
A wire from sender to gauge
A gauge
And thats it ?????
So to remedy
1.check/replace the wire.
2.replace sender
3. Replace the gauge if thats possible OR slap a water temperature gauge in in the triple pod by the gearstick, any advice welcome.

I would say that you just need to cut off the old connection and fit a new spade connector to it, usually the wires are all rotten for an inch or two. Also you can test the gauge by shorting the connection at the sender to ground (ignition on) - this will make the gauge go to max.

Changed the connection and make no differece
QUICK QUESTION; IF I AM STANDING IN FRONT OF MY CAR LOOKING IN ON THE ENGINE THERE ARE 2 "CONNECTIONS" INTO THAT PIPE IS IT THE FRONT ONE WITH THE FEMALE SPADE TERMINAL ON OR THE ONE BEHIND WITH THE "COVERE3D CONNECTOR" ?

In my experience it's nearly always corrosion on the contacts on the back of the instruments which can be cleaned up with some electrical contact cleaner.Or the gauge needs replacing. The red light should flash when you turn the ignition on but is no guarantee the other bit's working.

I have the same probem on my 1.8 Cabrio (year 1989). This morning I tried to take apart the instrument panel, but it seems to be a difficult task. I managed to remove the speed sender, but I have no clue on how to remove the connector and the vacuum sender.
