What do you mean "the gauge just goes off when it gets to a certain temp" - do you mean the red light stops flashing or the needle indicating the temperature falls back to zero?
If the red light stops flashing be grateful. It is supposd to..
If the needle records properly then drops back to zero - hmmm - tricky one. It is receiving a signal fom the sensor so no probs there - the next place to look is at the voltage regulator that services the temp gauge - I'll see if I can find a picture for you - hang about.

Try everything simple first - like checking the fuse is correctly located, not damp or corroded and check the wiring on the sender - not damp or damaged. You may just have a poor connection.
Anyway - this is the best I can do. Don't know you vehicle age so I took a bit of a guess. The Haynes manual shows a Voltage Stabiliser in the circuit for most models:
