Can you smell fuel when trying to restart ?
Could be:
Leaking injectors - whip them out and put in jars to test.
WUR giving an incorrect control pressure for hot start, hence a crap mixture - measure it !!
Accumulator no holding system pressure, it should hold of 25mins before pressure decay starts - measure it !!
Check valve on the end of the main pump partially blocked, which means fuel will leak back - take is out and clean it.
Fuel pump really overheating, which can lead to fuse box corrosion - look for heat damage.

Ade it's a carb model.
I had this problem and it was the starter motor.
The heat from the exhaust manifold tends todo em in.
We had cured it for a while as there is a wire with a connector that goes funny.
I think from memory Dek has had new starter, new ingnition switch etc. It's baffled us for a good while.
It will start by hot wiring it straight from the battery so it kind of points to ignition side, probably heat related as when hot a connection expands so breaks the circuit, when cold the connection is remade.
Hope it gets sorted Dek.

There are differences between GTI and Carboureted models though.

Mine is a Gti, however my friend has convinced me to ditch the K-Jet injection completely and fit a golf mk3 setup with standalone management so I have bought mk3 engine and he is going to fit it for me, might get a few engine mods too
