The rear loom is easy - just requires some trim and carpet loosening. The rear seat has to come out too - at least the left side pulled up.
The dash loom requires dash removal - easy but takes some time
The two engine bay looms are not too bad either, though you may have to move some minor components out of the way.
Just make sure you take some pics for reference and have a Haynes or similar for the wiring diagrams.

Why bother, there are enough used looms out there and you can keep the original colours and connectors which may help you identify later problems.
where? I need a dash wiring loom for a 1.6 79 gti and I dont know where to look. I've phone a few scrap yard with no joy, anyone got any ideas?
I had to buy the correct dash to replace the mk2 that was in when I bought it(thanks rajan) but when I took the dash out at first looked ok but i've since worked out its a mk2 dash loom cut at the fuse box end and made to fit mk1 box
thanks
