MK1 bonnets
I've just fitted a less rusty one and i can't get it to fit properly, the rusty one sat well enough. This one looks to have a more pronounced angle at the front near the grill.

Might be the difference between pattern and original??
..yes…
..also check the mastic that goes between the strengthening and underside of the outer skin - patchy or dobbed on pattern bonnets - really good smooth thick fillet going nearly all the way round on original VAG ones….and you might just be able to find/make out a VW/Audi logo on the underside……will get some pics up later….

I took a picture of what looks to be a genuine bonnet, it shows what almost looks like a crease… but i may just have forgotten what my old bonnet looked like!

yes it's frustrating to do, but this is how I do it..
1…remove the latch from the bonnet…(not necessary, but I find it easier)
2…remove the grille……(again, not necessary, but I find it easier later)
3…tighten the hinge bolts (DONT FORGET THE EARTH STRAP !!!) so that they are just holding the weight and so that the rear sits high….
4…gently place the bonnet in the fully down position and screw the rubber stops in or out so the front of the bonnet sits at the right height…
5…gently press the rear corners of the bonnet down till it lines up (don't forget front / rear alignment)…
6…gently lift and support the whole thing and tighten the himnge bolts fully…
7…check the alignment - repeat all the above if necessary…
8…when happy refit the latch and loosen the locknut (inside the spring)…
9…with the bonnet fully down adjust the centre pin of the latch (quite easy with the grille removed…) so that it is held tight by the release catch - get someone to help by pulling the bonnet release - you'll go back and forth quite a few times …
10..when happy - tighten the locknut and replace the grille…
