Advice on Swapping a complete Cabby Roof

Can anybody provide some guidelines for completely removing a vinyl roof and fitting a mohair roof.
I'm doing a complete roof swap (old white vinyl roof for black mohair roof) and not having done this before I could do with some help and tips.
I've found a thread which explains how to change the outer roof, but I want to completely remove my roof, frame and all, and re-fit the new one.
