Over Heating
Finally got the gti running after a full rebuild including the engine, only problem is the red light comes on ref the engine temp,
only after it has been on for a couple of mins does the fan then cut in and cools things down again and this repeats itself.
I have put a new therostat in,new rad and hoses. this is all happening on tick over and the occasional rev to about 3000 rpm.
Any thoughts.

Are you sure there's not any air locks in the system? Does sound strange.

Would say no because when i first got the engine running i left it run without the cap on the bottle
to make sure their was no air locks.

And interior heating heat on full hot? there is also the small cable that attaches to the rocker cover which if not attached does give problems with indication of coolant temp. Forgot to reattach mine after refurbing the cover and started showing overheating but that was not just on idle.
