Advice needed from a new owner

Hi all, well finally sorted insurance out and took her to work today,

I have noticed a few problems,
the first  been when i start her up a red comes on and off a few times above the Temp reading, this also doesnt move up and i dont think i have heard the fan……thermostatic?
is it a bugger to a) get one b) change it?

But the main problem is it doesn't always start or does start then cut out,
when I rev it up and the revs seem to go high too quick and in first gear and it is always stalling, like the biting point is so small, you have to start off and careful  really slow, not what i imagined from a golf…..any ideas on this one would be greatly appreciated,

Thanks in advance Baggie

The red light is normal i think.  Does the temp not register at all or only when driving?

Not sure on cutting out, maybe search old posts re vacuum leak, should be a good place to start.
