Not sure how to re connect coolant pipe with new manifold
I have bought 2 twin Weber 40 carbs and a new manifold for my mk1 caddy 1.6. But my new manifold is not water cooled so what do I do with the coolant pipe and the hole into my engine? Do I plug the hole or is there a fitting I can put in it to attach the pipe?

Welcome along mucker.
The hole will need to be plugged. It's actually a warm water feed to warm the carb manifold during start up and running until the car is warm.
If I remember correctly the water flow isn't under a great deal of pressure so a bung may do it. A bolt may do it.
You'll love the sound and the extra torque you get is mad!
Stick with the mechanical pump and they'll be no need for a pressure regulator or anything else.
Don't worry about a choke either.
