Cutting Out
When I drive my 1.8 Carb'd Cabby on motorway type driving, say above 65mph, for anything more than 10mins the car starts to stutter, nothing heavy, just once or twice. I normally slow down to under 60 and its fine but when I come off the motor way and come to the junction it loses power altogether and normally cuts out (highly embarassing if there are a few folk behind) unless I can get the power back on super quick. If it does cut out it'll take a few seconds to get it started again.
It sometimes is a wee bit stuttery when its cold too, again nothing major, litterly once or twice when I first pull away.
Any suggestions? All I've done ist replaced the plastic fuel filter so far.

Remove petrol cap and look inside the fuel filler neck, i have a feeling it is rusted and has an hole, with this rust gets into the tank and blocks the little filter shown in the link i gave you bud.
Also what carb you running? check the carb flange (Black rubber part) which the carb sits on, you are looking for splits or raised type bubles on the inside of the flange, this you can only see with carb off, this you are looking for air leaks
Also check your vacuum piping.
