My car needs a new roof, headlining and padding inside. I need to remove the whole thing for a colour change… frame and everything.
Is it better to remove the roof, headlining etc while it's still on the car? Then leave the frame for last?
My plan is to cut (carefully) the outer roof away from the frame and remove the rear window… then I'm not too sure.
Does anyone have a guide or link to something so I can read up on it before I start cutting bits away? I'm not in a rush for a roof but really need to get on with work on the body soon. Is this something I could do in a day?

Read them both, then re-read, and read them again.
You will need a good Stapler, and a 10mm Self Ratcheting box wrench that articulates, as well as new Cables.
Hood,
Padding Wrap, padding
Headliner in that order.
68 Beetle Convertible, about 1500 Staples
80 Cabriolet/Vert about 300.
That you have to remove and reinstall.

Removing a roof
Just take roof frame off complete.
Job done.
Side hood cover trims off
I do headliner from under parcel shelf supports
Unplug rear window heater wires
Undo rear tension cable
Take rear seats out. Unscrew plastic trims either side to reveal bolts. Unclip any rams or struts to the frame. Unbolt and lift off. Takes couple folks though.
