Flywheel, crankshaft and compression questions

Does anyone know anywhere in the wallingford(oxfordshire) area that will knife edge my crankshaft and lighten my flywheel?

Also I am fitting a crossflow head to a 2e block but want to raise he compression a bit. I know this will require the head to be skimmed but does anyone know by how much and what compression I should be looking for?

The car is going to be running 2e bottom end, ported an polished head, kent cam, throttle bodies and megasquirt.
