Any specific problems can then be asked.
In theory, it should be a case of removing the ecu and associated wiring both to the engine and to the fuse box.
I haven't done the engine you have but have removed the injection system from the 1400 16v and put it on carbs.
They'll be bits like distributor and ignition amps etc.
paul_c has done plenty of engine conversions and seems to know his onions. I'm sure he'll be along shortly with some great advice

If anything, its simpler than the GTI K-Jet injection setup - you'll effectively be disconnecting and not re-using the connections for:
5th injector
Aux air valve
Warm-up regulator
The other ones will be limited to distributor hall sender, coolant temp, oil pressure switch(es).
I don't know what your plan for fuel pump is - are you going to use some other electric fuel pump? If so it would make sense to re-use and re-route (well, use another wire from the fuse box) the fuel pump power feed wire, since the fuel pump relay has a prime and cut-off if the engine stalls. I can't remember the colour/location but a wiring diagram will help you here.
Obviously it makes sense to simply re-use the original electronic ignition control module, I think its called the TCI on a Mk1 Golf?
