The brown plug and sensor above it (thermo time switch) on top of the flange is used for the fuel injection system, it tells the 5th injector if it's needed by sensing the coolant temperature.

That looks like a switch of some kind as it has 2 terminals. Has got any kind of part number on it? I can just about make out some numbers.
I know the US cars had lots of extra bits attached to the CIS to control emissions etc, so it may be a thermo switch that was used for that purpose.
You could have a look on the online EKTA thingy - https://volkswagen.7zap.com/en/rdw/golf/go/
see if you can spot the part.
The thermo time switches are worth a bit of money (if its working).

From what I'm hearing it sounds like I can probably take it out and plug the hole since most folks don't seem to have it. I'll take it out and see what the part number tells me.
Mark1gls, yeah what you described about the top sensor being to check temp for 5th injector is exactly what I think the bottom sensor is on my car.

I have seen folks place a sensor in that position as they don't have a bung screw to fit.
Probably a (POS Previous Owners Screwup) to resolve the I dropped a part and can't find it.

Yeah I've seen that before about using a sensor as a plug. In this particular case when I couldn't find the wiring loom for it I went back and checked my pre-stripdown photos of the car and it looks like it was hooked up to the CIS system so I then checked the wiring and it looks and sounds just like what mark1gls said, possibly a thermo switch for the 5th injector. I'll pull it out and see if I can get a part number on it and confirm. Either way I don't think I need it if I'm running carbs so will try to find a plug…or I'll just leave the sensor in there lol 🤣
