Thermostat questions

So cooling thermostat s are sold as 87c

Now is that fully open temperature or when it starts to open?

Strange one I know but it's been bugging me

When it starts to open I thought.

Drop one in a saucepan (I mean a thermostat!) of water with a thermometer and heat it up to see what happens!
