Not actually jacking points are they ?? used in the manufacturing stage ??.  So unless looking for absolute originality ideal time to make a fitting far more suitable to taking a jack.

From the looks of the panel its the front edge of the floor pan, then there's a strengtheningplate over the top then this little jacking point. I want to keep it looking original as I can but more bothered about structural safety

As I understood it these four cups (two front and two U-shaped ones on rear chassis legs) were used in the factory to suspend the shell from.

If you jack on one of these you're very likely to push the floor up at the front.

Question; if I was to remove all four of they have gone on both fronts and the panels at the rear need work underneath the rear ones, honestly would it affect anyone inspecting the car if I were to sell it? (Not that I ever would) as in would it be glaringly obvious to a mk1 golf man if they weren't there?

I don't think so, especially if you've got a photo record of the work that's been done. The only issue would be for a complete concours geek!

Yeh I thought that like Andy, don't get me wrong I don't want to cut any corners but if they are of no use them just that time could be spent working on some other rust lol
