If you don't have an easy out and are really careful you could try drill down the centre with a 5mm drill and re tap it. Or if you end up having to go bigger with your hole then put an M6 helicoil in it.
ALthough I'm thinking if your having to ask how to do it then you may not have any of the above available to you in the short time you have if your going to a show.

I drilled a pilot hole first and then due to limited space had to 'screw' in the left handed bit by hand which wasn't easy until I could manage to get a socket on the end of the bit. Easy after that, I just undid the bolt and all was good.
It's a pain to do but if like me you don't have access to a welder this is a good cheap solution, plus I've got a set of left handed bits in case i need them in the future . If I remember correctly they were about £20 for the set from Halfords.
Good luck, just be careful when drilling the pilot not to go too dear and stay central !
