You haven't said what car it's going into, so it's not easy to help.
Projekt Frustration :
White 1991 Clipper. Lowered over polished zender rims, Single 40 dellorto on lynx manifold, kent cam, full stainless 'zorst / manifold, powerflex bushed and braced. Not the fastest car, but sounds super nice!
Still going after 12 years… never said it was a quick fix! Time is not my friend.

Depends what your into. You can't beat the sound of a well set up engine on carbs! There's no good reason to say it's going back in time dude. If that was the case weber and companies like eurocarb wouldn't exist.
It's not easy living with performance carbs, but it's worth it.
Other than that only other way for me would be throttle bodies or bin the valver for a 1.8t

I guess It all depends on the circles you move in. Personally I'm onto the Retro scene and that's where carbs are from! I have no problem running carbs, you just need to give the car a bit of time to warm up, which is no detriment to an 18 yr old lump that's covered 118k!

mine were pretty lumpy on idle, you had to be prepared for bouncing revs etc, odd cold starts n stuff. but on full blast hell yeah! not great for round town/daily drive.
injection if you just wanna tootle around town drive smooth n generally blend in n drive like you would in a normal car n have the reliablilty in the morning (if its done propper)

I'm not sure I could live with it as a daily driver, but for a toy its great.
I ended up selling the twin dellorto's I had as I couldn't face the expense of fully rebuilding them and also the hassle of setting them up when they would sit over the 'zorst and face the fire wall!!
If I ever get the funds to drop a valver in then I'm going carbs without a doubt. Already got a 2d weber alpha management system to handle the ignition side.

16v loom would be my choice, and dont worry its dead easy to wire up, bugger all wiring really everything you need is in the engine bay, dont have to touch the fusebox.

So does K jet! God knows why VW took so long to go with EFI!
….because mechanical fuel injection works! The reason they moved to electronic (firstly with the KE-Jet, then Digifant, neither of which are well respected) is for emissions reasons, not performance. Basically it was so they could also use a catalytic converter, which needs the air:fuel ratio close to stoichiometric. And in fact, if you look back a little further, VW were one of the first with fuel injection, using D-Jetronic in the VW Type 3 in 1968.
K-Jet doesn't have many issues and is very tunable.

apparently a dizzy off a pug 1.9 gti works pretty well with the 16v, not done it mesen tho. otherwise need a points ign dizzy from a MK1 1.3, as you can imagine ign curve isnt going to be great!
there are places that can play with the advance curve, but getting to be a bit of a dying artform now.
