interior retrim (dash) ?

i am looking to change the interior on my 1.8 gti tintop i am not keen on the shiny vinyl dash and door cards has anybody had a dash re covered and wouldn't mind sharing some info on what was used and who done it with some pictures to back it up..

i dont like leather or hard shiny vinyl. i have seen one or 2 pictures online but no build threads or information on what it is or how it was done.

also having never removed or seen behind the roof lining is this something that can be covered in another material or is it a case of making a fresh roof lining using a new material rather than re covering it.
